Farro, Almond, and
Blueberry Breakfast Cereal
SERVES 4 (1 cup each)

In a bowl combine 1 cup whole
grain farro and enough water to
cover. Soak in refrigerator
overnight. Drain of any water. In a
small saucepan combine 2 cups
unsweetened almond milk,^1 ⁄ 2 tsp.
vanilla,^1 ⁄ 4 tsp. kosher salt, and

(^1) ⁄ 8 tsp. ground cinnamon. Bring to
boiling. Stir in farro; reduce heat.
Simmer, covered, 20 minutes or
until farro is tender. Stir in 1 cup
fresh blueberries;^1 ⁄ 4 cup chopped
toasted unsalted almonds, and,
if desired, 2 Tbsp. maple syrup.
Cover; let stand 5 minutes. Spoon
cereal into bowls. Sprinkle each
with 1 Tbsp. chopped toasted
unsalted almonds and^1 ⁄ 8 tsp.
lemon zest.
