Strawberry-Pistachio Breakfast Quinoa
SERVES 4 (^3 ⁄ 4 cup each)


In a bowl combine 1 cup sliced fresh strawberries and 1 tsp. sugar.
Let stand 10 minutes, stirring occasionally. Meanwhile, in a medium
saucepan combine 2 cups water and 1 cup quinoa.* Bring to boiling;
reduce heat to medium-low. Cook, covered, 10 to 15 minutes or until
water is absorbed. Remove from heat. Stir in^1 ⁄ 4 cup apple juice and
3 Tbsp. reduced-fat peanut buter spread until combined. If necessary,
stir in additional apple juice to make desired consistency. Stir in


(^1) ⁄ 2 cup chopped fresh strawberries. Divide mixture among four bowls.
Top each with sliced strawberry mixture and 1 tsp. chopped pistachios.
*TIP If quinoa is not prerinsed, rinse and drain quinoa in a fine-mesh
strainer before using.
