125gbutter,chopped
150gdarkchocolate,chopped
1 egg, beatenlightly
2/3cup(150g)castersugar
¾cup(110g)plainflour
¼cup(35g)self-raisingflour
freshraspberries, to serve, optional


CHEESECAKETOPPING
250gcreamcheese,softened
1 teaspoonvanillaextract
1/3cup(75g)castersugar
½cup(125ml)cream
1 egg, beaten lightly


1 Preheatovento170°C/150°Cfan.
Greasea 20cmsquarecakepan,line
thebaseandsideswithbakingpaper,
extendingpaper2cmoversides.
2 Placebutterandchocolatein
a heatproofbowlovera panof
simmeringwater;stir occasionally
untiljustmelted.
3 Beattheeggandsugarina small
bowlwithanelectricmixeruntil
thickandcreamy.Foldinchocolate
mixtureandsiftedflours.Spread
mixtureintopreparedpan.Bakefor
15 minutes or until just firm to touch.

4 Meanwhile, make cheesecake
topping.
5 Spreadcheesecaketoppingover
browniebase.Bakefora further
12 minutesoruntilcheesecakeis
justset;coolbeforecutting.Serve
withraspberries,if desired.

CHEESECAKETOPPING
Beatthecreamcheese,extractand
sugarina smallbowlwithanelectric
mixeruntilsmooth;addcream,beat
untilthick.Addegg and beat until
just combined.
