¼ cup cake flour
½ tsp baking powder
¼ tsp salt
4 large eggs
2 tbsp olive oil
1 cup chopped cooked potatoes
½ cup grated Gruyère cheese (about 120g)
¼ cup drained and chopped pickled
peppers
2 spring onions, finely chopped


  1. Preheat waffle maker. In a large bowl,
    whisk together flour, baking powder and
    salt. Add eggs and oil; whisk to combine.
    Fold in potatoes, Gruyère, peppers and
    spring onions.


WOMELETTES


Preparation Time 20 minutes Total Time 40 minutes Serves 6


  1. Spray waffle maker with nonstick
    cooking spray and add ¼ cup batter. Cook
    for 5 minutes or until deep golden brown.
    Keep warm on a baking tray in a 105°C
    oven. Repeat with remaining batter. With
    a 7,5cm cutter, cut womelettes into rounds,
    if desired.
    EACH SERVING About 750kJ, 8g protein,
    12g fat (3g saturated), 10g carbohydrate,
    1g fibre, 320mg sodium.
