O45ml vodka
O15ml elderflower liqueur
O15ml lemon juice
O10ml ginger syrup
OKombucha (to top up)
OCubed ice
GARNISH: Fresh ginger slice, lemon
wheel, sprig of foraged flora


1 Add the vodka, elderflower
liqueur, lemon juice and
ginger to a cocktail shaker.
2 Half-fill with cubed ice and shake.
Add fresh cubed ice to a highball
glass. Strain the drink into the glass.
3 Top up with kombucha, garnish
as shown and serve straight away.

We prefer to use kombucha that’s brewed in Ibiza as the
effervescent element to this drink. Its natural fermentation brings
another element to a drink that would normally boast acidity.
In fact, we suggest you use kombucha as an alternative
to carbonated soft drinks at any opportunity.
