To 1 cupofriceuse2%cupsofwater.

Cookinacoveredpan,overahotfire,until
the water has evaporated. Remove to the
back of the stove for afew minutes. Then
takefromthe stoveandkeepthepancovered
for 10 minutes.
The flavorof the rice is greatlyimproved
by addingbutterand salt.
