Cinnamon-Apple Sprouted Wheat


Sprouted wheat, a fantastic source of protein, still contains some gluten. It can be replaced here with sprouted buckwheat, which is gluten free


and even higher in protein.


SERVES 2 TO 4

8 seeded, soaked dates, drained
2 cups sprouted wheat berries
2 apples, peeled, cored, and shredded
1 teaspoon ground cinnamon
1 teaspoon freshly ground nutmeg
½ cup raisins, for garnish

In a food processor, combine the dates, wheat berries, apples, cinnamon, and nutmeg and pulse until combined but still chunky. Transfer to a bowl,
garnish with the raisins, and serve.
