Apple-Cinnamon Cup
This dish was inspired by harosset, a traditional dish made of apples, walnuts, and wine eaten at Passover. Whenever I go to a Passover seder,
I bring this dish, and it’s always a big hit.
SERVES 2 TO 4
6 seeded, soaked dates, drained
Juice of ½ lemon
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon freshly ground nutmeg
3 crisp apples (such as Fuji or Gala), peeled, cored, and shredded or cut into matchstick-size pieces
¼ cup soaked raisins, drained
2 tablespoons chopped walnuts, for garnish
In a food processor, combine the dates, lemon juice, cinnamon, allspice, and nutmeg and process until smooth. Transfer to a large bowl and stir in
the apples and raisins. Spoon the apple mixture into individual bowls or ramekins, garnish with the chopped walnuts, and serve.
