safe way to do it is to
place the beignet on a
spider and slide it from
the spider into the oil. If
you use your hands, be
very careful. As soon as
the beignet is in the hot
oil, gently flip it over with
a spider or slotted spoon.
Set a timer and fry the
beignet for 2½ minutes;
then gently flip the
beignet over again and fry
