bles and legumes, which provide rich

Ingredients:
12 cups romaine lettuce
2 medium red tomato, sliced or diced
½ cup sliced cucumbers with peel
1.5 cups kidney beans (or legume of your choice)
1 cup sliced crimini mushrooms
2 TBS grated Parmesan cheese
Dressing:
4 TBS lemon juice
1 TBS extra virgin olive oil
2 garlic cloves, chopped (optional)
Salt and pepper to taste
Directions:
Combine all ingredients and toss with dressing ingredients. Dressing ingre-
dientsdon't have to be combined separately before tossing.
