Mediterranean Lentil
Salad


Unlike beans, lentils don't require soak-
ing before cooking and can be prepared
in 20-30 minutes. They provide you with
a great source of molybdenum and folate
in your Healthy Weight Loss Plan.


Ingredients:


2 cups cooked lentils
½ medium red onion, chopped
2 cloves garlic, chopped
½ cup tomatoes, diced
½ cup red bell pepper, diced
2 tsp fresh lemon juice
1 TBS extra virgin olive oil
4 TBS sunflower seeds
4 cups romaine lettuce
Salt and pepper to taste


Directions:



  1. Chop garlic and let sit for 5 minutes to bring out its health-promoting
    properties.

  2. Combine all ingredients and toss. Serve with romaine lettuce.
