Vitamix, combine the drained rice and
lentil mixture, tofu, lemon juice, salt, and
1 cup water.



  1. Grind on high for 4 to 5 minutes, until
    smooth. Be patient. You may need to
    stop and scrape down the sides of the
    jug so that it blends evenly. Pour the
    mixture into a deep bowl.

  2. Let the batter sit for 2 to 3 hours. No
    more, or it will start to sour.

  3. Oil a deep, square pan. (Mine is 9
    inches [22.5 cm] square and 2 inches [5
    cm] deep.)

  4. Sprinkle the eno or baking soda
    across the bottom, and stir gently 2 or 3
    times. You’ll immediately see it start to
    bubble.
