Milk


Milk is usually served cold, un-spiced, homogenised and mixed
with other foods. Served like this it can increase your risk of heart
disease, cancer and obesity. Pasteurisation is a technique used in
the mass production of milk to eliminate the chance of bacterial
infections. This process is carried out for 15 seconds at a
minimum of 121°C for sterilised milk. This seems to create
disorganised milk proteins, which are difficult for the digestive
enzymes to hold on to and break down.


With the further process of homogenisation, the cow's milk
we are offered today is far removed from the cows milk that was
"highly regarded by ancient civilisations.


Fat free cow's milk has lost all of its manganese
and most of its selenium as well as vitamins A, D and E.


Preparation is vital. Getting hold of raw milk is best, if
possible. You can boil it before serving to kill off any harmful
bacteria. This also helps in making the protein easier to digest.
Drunk with spices, such as cinnamon, cardamom, ginger, black
pepper and a bit of raw honey or maple syrup the ayurvedic
qualities of this drink greatly improve. Options include goat's milk
(which is less mucus-forming), sheep's milk, buffalo's milk (ask for
that at your local 7-11!) and alternatives such as rice milk, soya
milk and nutritious hemp milk.
