aromatize for 1 minute. Add the ground beef, throw
on the salt and all the spices, and cook, stirring often
to break it up, until browned, about 10 minutes.
Optional: sprinkle on a generous amount of
nutritional yeast.
How to serve it:
1 . Alongside or over Sautéed Greens (page); my favorite
is kale.
Grass-Fed Picadillo
I lived in Miami for four years when I went to college and
couldn’t get enough of Cuban food, especially picadillo.
Here’s a healthy variation on this traditional dish that I make
often.
SERVES 2–3
What you’ll need:
1 tablespoon extra-virgin olive oil
1 large yellow onion, finely chopped
4 garlic cloves, smashed and peeled
1 pound grass-fed ground beef
1 teaspoon salt
1½ teaspoons freshly ground black pepper
