¼ teaspoon red pepper flakes, optional
⅓ 12-ounce jar no-added-sugar organic tomato sauce
(tomato sauce will have some natural sugar from the
tomatoes)
½ cup pitted olives, sliced (olives stuffed with pimientos
is fine)
What to do:
1 . Heat the oil in a large skillet over medium heat. Add
the onion and cook for 4 to 5 minutes, until softened.
Throw in the smashed garlic and allow to aromatize
for 1 minute. Add the ground beef, throw on the salt,
pepper, and red pepper flakes, if using, and cook,
stirring often to break it up, until browned, about 10
minutes. Add the tomato sauce and olives, bring to a
simmer, then reduce the heat to very low and simmer
for 10 minutes.
How to serve it:
1 . Alongside or over Sautéed Greens (page) or “riced”
cauliflower (sautéed in garlic, salt, and extra-virgin
olive oil).
