What to do:
1 . In a large skillet, heat the oil over medium heat.
Throw in the onion and cook until softened, 4 to 5
minutes. Add the garlic and cook for 1 to 2 minutes,
until aromatic. Add the kale, salt, and pepper, reduce
the heat to medium-low, cover, and cook, stirring a
few times, until softened (approximately 10 minutes).
How to serve it:
1 . I love to add a grass-fed beef patty, a piece of wild
salmon, 2 or 3 poached or lightly fried eggs, or a few
chicken legs to these greens.
