Fruit Rawies
These delicious dehydrator delights are quick and easy to make. These were originally called “fruit cookies,” but since there is no cooking
involved, I’ve dubbed them “rawies.”
SERVES 3 TO 4
10 seeded, soaked dates, drained
6 bananas, peeled and halved crosswise
1 cup peeled, cored, and coarsely chopped pineapple or 4 apples, peeled and cored
1 cup chopped walnuts
1 teaspoon ground cinnamon
Dash of pure vanilla extract
In a food processor, blend the dates, bananas, pineapple, walnuts, cinnamon, and vanilla until the fruit is just slightly chunky. Form the mixture into
little balls, using 2 to 3 tablespoons for each, and flatten each ball into a disk 1 inch thick. Arrange on drying trays and, using one of the methods
described here, dehydrate for 18 hours, or until dry.
