Mellow Melon


There are many ways to juice a watermelon, but my preference is to use a juice press, which keeps the liquid vital and prevents oxidation for up


to twenty-four hours. When the juice oxidizes, it separates and forms sedimentary particles. If you obtain the juice any other way (centrifuging,


masticating, or grinding), the juice will oxidize in less than one hour. It is amazing to see a glass of freshly pressed watermelon juice—it glows


brightly, especially when put in the sun. (Pictured here, top right)


SERVES 2 TO 4

1 huge watermelon (8 to 10 pounds), rind removed and chopped

Place the watermelon in a juice press or in a cloth bag over a bowl and press or squeeze firmly. You can also blend the watermelon in a blender,
slowly at first, then faster, then strain. Pour into tall glasses and serve.
