beignet in half to make
sure that it is baked
enough on the inside; this
should set the standard
for the timing for the rest
of the beignets. If the
surface gets too dark,
reduce the time by 30
seconds on each side. If
the beignet is doughy,
increase the frying time to
3 minutes on each side.
