In a large deep pan, bring water to the boil (8-10 times volume of
rice). Add washed and drained rice and a tbsp ghee or oil or a tsp
salt, and stir immediately. When water returns to the boil leave for
two minutes, then turn heat to low and partially cover. Cook rice
for 10-15 minutes depending on variety used. When cooked, tip in
a colander and drain thoroughly. Place back in pot, cover tightly
and let steam for a few minutes before serving.


Method B:


In a shallow, heavy based pan with a tight fitting lid boil water
(twice volume of rice) with one tbsp ghee or oil or a tsp salt. Add
washed and drained rice, stir carefully with fork. When water
returns to boil, reduce heat to low and simmer, mainly covered by
lid, until most of water is absorbed and the surface is full of steamy
holes (approximately ten minutes). Do not stir. Now cover fully and
place on lowest possible heat setting until done (approximately
five more minutes). When rice is fully cooked, fluff up with fork.
Keep rice off heat, but in pan for ten minutes before serving.


Approximately 1/2 cup of uncooked rice per person is
adequate as it trebles in bulk upon cooking.
