‘Oh Little Town of Bethlehem’ is one of our favourite carols, but did you know it was inspired
by a perilous journey taken on horseback on Christmas Eve 1865? The journey the carol’s
lyricist Phillips Brooks took, was from Jerusalem to Bethlehem where he was to assist at the
midnight service in the church of the nativity.

CHRISTMAS CAROL CAKES

CAKE ARTIST:
Lindy Smith

1 Decorate the edges of your board,
using an airbrush and snowfl ake stencils.
Start with the burgundy airbrush colour
and the largest crystal snowfl ake stencil,
hold the stencil on the board or slightly
over the edge and spray until you are
happy with the depth of colour. Leave a
space, reposition the stencil and spray
again. Change the stencil design and
colour and repeat.

2 To fi ll any gaps between the
crystal snowfl akes on the covered
board, take the mini snowfl ake
stencils and add these to the
pattern, taking care not to smudge
the wet snowfl akes beneath. ➜
